This month, I made 2 quick and healthy Thanksgiving inspired meals. I like to use seasonal ingredients that are peak in flavors and packed with nutrients.

Gluten-Free Pear Pie (healthy Thanksgiving dessert): Gluten-Free Pear Pie | Zara Cooks
Turkey Stroganoff (using leftover Thanksgiving turkey): Turkey Stroganoff | American Diabetes Association
Pattie's notes:
If your don't have maple syrup, use honey or agave in the same ratio.
Add chopped celery and carrot to turkey stroganoff for more fiber
I used chickpea Cavatappi pasta (for more fiber and some protein) instead of egg noodles in the turkey stroganoff recipe
Don't stress about carb or calories, but instead enjoy your meals with family and friends. Here are some tips to help you enjoy your holiday meals.
Portion of your carb (starches, fruits and dessert), protein and vegetables on your plate before eating.
If you still want more go for more proteins and vegetables.
Drink water before going for seconds or thirds.
Take a walk or moving around after meal to help your body bring down blood sugar faster.
